Fox Creek’s savoury “JSM” Shiraz Cabernet, which makes use of both Cabernet Sauvignon and Cabernet Franc, is all about tasteful strength.
Dried red fruits, citrus peel, and a whiff of smoke, all backed up with the well-balanced acidity.
First produced in 1995 Shiraz components were selected for fruit richness and elegance, Cabernet Sauvignon for ripe round tannins and length and Cabernet Franc for aromatic lift and fruit weight. JSM is matured in 1 to 4-year-old French and American barrels for 20 months prior to blending.
About the Winery
When partners Helen and Dr Jim Watts purchased the vineyards (with, yes, a creek and a number of foxes) that eventually formed the core of Fox Creek, they were advised that the area’s black clay soils were unsuitable for winemaking.
The gradual growth of the Fox Creek project – from contract winemaking to a private label and a host of awards and recognitions, and internationally as exporting began in earnest – has well and truly proven that wrong.
